    Once upon a time in the 14th century, carrots were imported into Europe but they didn’t resemble the carrots we know today – they were purple (as well as red and white!) It wasn’t until the 16th century that orange carrots were grown in Holland and later imported to England.

    Calling the chef’s table Purple Carrot emphasises Jason’s philosophy about food provenance and taking his menus back to nature, as well as people’s hunger to know more about where their food has come from.

    80% of the produce (including purple carrots) is home-grown in the walled garden of the old manor house – all cultivated in the old-fashioned manner by Martin the gardener

  • Jason: a rising star in the culinary world, with a wicked personality

    The first and only Chef Patron at von Essen hotels, Jason Hornbuckle has trained with some of the world’s leading chefs, worked at some of the world’s most inspirational restaurants and received some of the world’s most prestigious awards.

    The creation of Purple Carrot was Jason’s idea. He saw chef’s table potential in what was a staff room adjoining the kitchen and played an active role in its creation, choosing the finest and most aesthetically pleasing cutlery and working with local craftsmen to design and create the furniture and fittings. This really is Jason’s ‘baby’ – he loves every inch of it, and it shows! With the ability to outdo any celebrity TV chef, Jason is of course, always centre stage, charming and entertaining diners throughout their experience!
